Ingredients
- 4 cups red cabbage – finely chopped
- 2 cups carrots – finely chopped
- 1 large apple thinly sliced
- ½ cup raisins
- ½ cup dried unsweetened cherries (may use cranberries)
- ½ cup pumpkin seeds
- ¼ cup sunflower seeds
- ½ cup chopped walnuts or pecans
For the Dressing
- ¾ cup extra virgin olive oil
- ¼ cup raw apple cider vinegar
- 1 Tbsp grated fresh ginger
- 1 Tbsp raw honey
- Pinch of sea salt
Instructions
For the slaw:
Toss above ingredients together.
For the dressing:
Blend Dressing ingredients in blender for about 30 seconds. Pour over tossed cabbage mixture and mix together. Chill for 1 hour before serving to incorporate flavors.
