Ken Paschke Baked Beans

Ingredients

  • 2 lbs. navy beans, soaked overnight
  • 3 quarts water
  • 2 tsp. salt
  • 1 cup brown sugar
  • 2 tsp. dried mustard
  • 2 medium onions, chopped
  • ½ cup catsup
  • ¼ tsp. pepper
  • ½ tsp. salt
  • ½ cup full flavor molasses
  • 1 tsp. Worstershire sauce
  • ½ tsp. liquid smoke
  • 3 tsp. sweet pickle relish

Instructions

Soak beans overnight in a large bowl, rinse beans then boil in fresh water until the skins crack. Pour the bean water into a bowl; put 2 cups water back in with beans and remaining ingredients and bake for 5-7 hours. Add from the remaining liquid as needed to keep the beans from drying as they bake.
