Ingredients
SERVINGS: Makes 16 sliders
- 2 lbs. ground lamb
- ¼ c. finely chopped white onion
- 2 Tbsp. chopped cilantro
- 2 garlic cloves, finely chopped
- 1 tsp. salt
- 1/8 tsp. ground pepper
- ½ tsp. sweet smoked paprika
- ½ tsp. ground turmeric
- ½ tsp. ground cumin
- 16 slider buns, split in half
ORANGE OLIVE SALSA
- 1 Tbsp. extra-virgin olive oil
- 1 c. finely chopped red onion
- ½ c. pitted Kalamata olives, chopped
- 2 seedless oranges, peeled & cut into ¼-inch dice
- 1 Tbsp. chopped fresh mint leaves
- 1 Tbsp. chopped fresh cilantro
SPICED MAYONNAISE
- 1 c. prepared mayonnaise
- ½ tsp. sweet smoked paprika
- ¼ tsp. ground cumin
- A dash of sriracha or chili garlic sauce (to taste)
- 2 Tbsp. chopped fresh mint
Instructions
In a bowl, combine all lamb patty ingredients. Make 16 patties (2 ounces) and place on a parchment-lined sheet pan.
In a bowl, combine ingredients for orange olive topping. In a separate bowl, combine the ingredients for the mayonnaise. Refrigerate until ready to use.
Preheat grill to medium-high (375 degrees). When hot, place patties on grill; cook for 2 min- utes then turn. Cook for another 3 to 4 minutes, until cooked through.
Place on bottom of split slider buns. Top with spiced mayonnaise then orange olive salsa. Top with remaining slider bun; secure with a decorative pick.
