Bruised Fruit & Rosemary Vinegar

Bruised berries, nectarines, plums, cherries and peaches work well for this recipe.

Ingredients

  • 1 pint fruit of choice, suggested fruit is any type of berry, peaches or nectarines
  • 2 c. white wine vinegar
  • 2 Tbsp. sugar, honey or agave nectar

Instructions

In a medium bowl, place the fruit. Lightly smash the fruit with a fork. Place the fruit in a sterilized glass bowl or jar. Add the vinegar and sugar and stir or shake to combine. Place fresh rosemary sprigs in the bowl or jar. Cover and let sit at room temperature for 2 days.

After two days, strain the mixture through fine cheesecloth. Discard the fruit and rosemary. Place in a sterilized jar or bottle. If desired, add a fresh sprig of rosemary. Store in the cupboard or pantry.
