Pleasing the Eye, not just the Stomach
There is no need to check the calendar to determine the time of year. Merely look to the kitchen, where the tale will be told.
Place the minced garlic and salt in a mortar and pestle and mash until it makes a paste. Add the juice of ½ freshly squeezed lemon. Mix with pestle until blended. Add freshly ground pepper. Mix well with a fork. Transfer the mixture to a small jar with a tight fitting lid. Add the extra virgin olive oil, close the lid and shake vigorously. Dress the salad by the spoonful. Mix well until the salad glistens.
