Hopi Blue Flour Corn Bread

Ingredients

  • 2 cups corn meal (blue or other)
  • 2 cups whole wheat flour
  • ¼ cup honey (optional)
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • 2 eggs
  • 2 cups milk
  • ½ cup soft shortening

Instructions

Sift together dry ingredients. Add eggs, milk, optional honey, shortening. Beat until smooth. Bake in greased 9 X 13 inch pan in preheated hot (400°) oven for 20 – 25 minutes.
