Ingredients
SERVINGS: 2 Dozen
- 2 cups raw unsalted almonds
- 1 cup pitted dates
- 1 cup dried tart cherries
- ½ tsp vanilla extract
- Pinch of kosher salt
- 1 Tbsp chia seeds
- 1 Tbsp cold water (if needed)
Instructions
Place almonds in food processor. Pulse until almonds are a fine meal. Add pitted dates, cherries, vanilla, salt and chia seeds. Process for about 2 minutes or until a dough is created. If dough seems dry, add cold water and pulse to combine.
Use palms of your hands to roll mixture into 24 balls. Store in refrigerator in an airtight container for 4 days. The energy bites can also be placed in freezer for up to 3 months.
