BEET AND APPLE CIDER WASSAIL

Wassail gets its name from the Anglo-Saxon phrase “waes hael” which translated to “good health.” Originally, wassail was made with mulled ale, roasted apples, cloves, ginger, nutmeg and sugar. Adding fresh beet juice to a traditional wassail gives this autumn beverage an added boost of natural sugar and health benefits. Although this recipe is alcohol-free, for an adult version, add a splash of spiced rum or brandy.

Ingredients

SERVINGS: 8 Serving(s)
  • 1½ cups fresh beet juice
  • 6 cups apple cider
  • 1 cup fresh orange juice
  • 2 Tbsp fresh lemon juice
  • 3 whole cinnamon sticks
  • ¾ tsp whole cloves
  • 1 tsp freshly grated gingerroot
  • 3 whole star anise
  • 4 pods green cardamom
  • Honey or agave nectar (if you prefer a sweeter wassail, add to taste)
  • 1 orange, thinly sliced, for garnish

Instructions

Combine juices and spices in a large pot. If desired, add honey or agave nectar to taste. Simmer on low heat for 30 minutes. Remove from heat. Strain mixture into a punch bowl or into a pitcher. Serve warm in individual cups. Garnish with slices of orange.
