Ingredients
PUMPKIN SEED CLUSTERS
- 3/4 cup hulled pumpkin seeds
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 tsp vegetable oil
- 3 tbsp sugar
APPLE CIDER DRESSING
- 3/4 cup olive oil
- 1/4 cup Wood Orchard Market apple cider
- 1/4 cup apple cider vinegar
- 1 tbsp mayonnaise
- 1 tbsp honey
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp ground pepper
Salad
- 2 bunches of kale or preferred greens, large stems removed and finely chopped
- 1/2 cup dressing (or to taste)
- 2 cups shredded chicken
- 2 Wood Orchard Market SweeTango® Apples, cut into matchsticks
- 4 oz crumbled goat cheese
- 1/2 cup pumpkin seed clusters
Instructions
In a small bowl toss all ingredients for pumpkin seed clusters together. Set a small saucepan over medium-high heat and add the mixture.
Heat, tossing constantly until the sugar starts to melt, about 3-4 minutes. Turn the heat to medium or medium-low until all the sugar is melted and seeds are lightly toasted, about 2-3 minutes longer. Turn over onto a piece of parchment or wax paper and let cool completely and break into large chunks.
In a small bowl add all ingredients for the dressing and blend together until smooth. Set aside or make ahead.
Toss the chopped greens in the dressing. Top with chicken, apples, goat cheese and pumpkin seed clusters.
