Door Artisan Cheese Opening in Egg Harbor
Slated to launch in April 2017, Door Artisan Cheese Company is a brand-new 18,000-foot facility in Egg Harbor. The property will function as a cheese-making plant and feature a specialty food retail shop, the Cave Market, and a casual fine-dining restaurant, Glacier Ledge.
Under the leadership of Wisconsin Master Cheesemaker Mike Brennenstuhl, the facility will produce both traditional Wisconsin cheeses and original-recipe creations. Three caves on the property’s lower level will be utilized for aging cheeses from Door Artisan Cheese Company’s plant. The aging caves will be the first of their kind in Northern Wisconsin, as most of the state’s in-ground aging facilities are in southeastern part of the state.
“It’s been my dream for years to open up my own facility in Door County,” said Brennenstuhl, CEO and president. “My career has deep roots in Wisconsin cheese making, and it’s an honor to bring such a versatile facility and cheese making excellence to northeastern Wisconsin.”
Cheeses made on site as well as other domestic and international varieties will be available for tasting and purchase at Cave Market, the building’s specialty food retail space. The market will also stock local and specialty ingredients and feature a wine and charcuterie bar for tasting. Adjacent to the cheese-making plant, guests can observe and interact with the cheese makers through a large viewing window in the market.
At Glacier Ledge, guests can expect a casual fine dining experience with a seasonal menu packed with local ingredients and expert culinary preparation.
